Easy, healthy and quick lunch – Chickpeas with Spinach

Chickpeas with Spinach – This quick dish can be served as a side dish or a main dish. It can be served in its broth in winter or with a squeeze of Lemon juice in summer. As you can see its a very flexible dish and high in protein. It is easy and super quick to prepare and very rich in flavour.

The Ingredients:

Preparation time: 5 minutes

Cooking time: 5-10 minutes

Ingredients:

  • Chickpeas
  • Two big handful of Spinach
  • Optional: Garlic and/or a small onion
  • Optional: Lemon

Chickpeas with Spinach - The Recipe:

Step 1: Wash your canned Chickpeas and the Spinach.

If you are using dry Chickpeas make sure to prepare them as described on the label in advance. Usually the process of soaking and cooking dried Chickpeas takes around 24 hours, unless you are preparing them in a pressure cooker.

Step 2: Cut the onion and the garlic into small cubes.

Step 3: Heat up a pan with some olive oil on medium heat. Add the onion and garlic first. After 2 minutes add the chickpeas. After 2 more minutes add the spinach. Add some salt and Pepper. Leave the pan on the stove on medium heat until the spinach is cooked (2-3 minutes).

 

Step 4: Serve and Enjoy!!. I like to add some Lemon on my plate and drizzle it over the dish. It makes it even fresher in summer and super delicious.
