Lentil-Summer-Salad – This delicious and colourful Lentils salad is yet another quick and easy summer Lunch idea. If you want something fresh and healthy for those warmer days, this recipe is the right one for you.

The Ingredients:

Ingredients:

  • Lentils from a Jar
  • One green and one red Italian Pepper
  • Black olives (I recommend Kalamata Olives. I could eat them every day!!)
  • A handful of Tomatoe(s)
  • One small onion
  • Feta Cheese
  • Optional: Lemon
  • Olive oil, Salt, Pepper and Vinegar/Lemon

Lentil Summer Salad - The Recipe:

Step 1: Wash your canned Lentils

Step 2: Cut the onion in small cubes (or whatever shape you prefer)

If you do not use a sweet/salad onion, you can follow my ultimate tipp to make every onion salad-ready. Put your cut onion on a small plate and cover quite some salt. Let it sit for 4-5 minutes then wash the salt off with water. The salt has removed the spiciness of the onion. You are left with delicious crunchy onion for your salad.

Step 3: Cut your Tomatoes, Feta cheese, Green & Red Italian pepper in small cubes.

Step 4: Put the ingredients from Step 2, the washed lentils, Olives, Feta and the sweetened-up onions in a big bowl

Step 5: Drizzle over some olive oil and white vinegar. Season with Salt and pepper.

Tipp: Replace the Vinegar with fresh Lemon juice for the ulitmate summer-freshness

Step 4: Serve and Enjoy!!
