This recipe for ‘Mediterranean Couscous Salad’ is an absolute crowd pleaser. It is quick and easy to prepare. The Salad is the perfect thing to bring to a bbq or event because it can easily be prepared the day before.
There are plenty of recipes for a Mediterranean Couscous Salad in the internet. They often wary by just some one or two ingredients. However, those ingredients can make a big difference. The below recipe is my absolute go to recipe. The nice thing about it that you can easily make it your own my adding and/or removing ingredients as per your liking.

Ingredients:
- Couscous 200g ( ~ 1 1/4. Cups)
- Vegetable broth 170ml ( ~ 5.7 oz)
- Fresh tomatoes (two handful)
- English Cucumber (half) (or one cucumber of type Slicer)
- Feta cheese (half a block)
- Small Onion (red / or sweet)
- Black Olives (handful)
- Flat leaf-parsley (handful)
- Dressing: 1 medium sized Lemon (or half of a big lemon), Olive oil, Salt, Peppers
Mediterranean Couscous Salad - The Recipe:
Step 1: Warm up the vegetable broth on the stove or microwave. The broth should be hot but not boiling. Put the Couscous in a bowl and add the hot vegetable broth. Mix it with a fork. Cover the bowl with a kitchen towel during 5 minutes. While its covered, stirr the Couscous with a Fork every minute.
Step 2: Cut the Cucumber, tomatoes, feta cheese and onions in small cubes (see picture). Chop the Parsley. Add Ingredients to the bowl, including the whole olives.
Step 3: Add the juice of the Lemom, olive oil, salt and pepper.
Step 4: Enjoy the Salad now or keep in the Fridge and eat during the next days.
